Pork Loin on the Rotisserie Grill
Love to entertain? Looking for a spectacular tasting and visual main course? If so, nothing beats a spit roasted pork loin. The flavor is fantastic and presentation of the pork loin on the spit and table bring a elegant element to outdoor entertaining.
Ingredients:
- 1 – 3 pound boneless pork loin roast , well marbled with any surface fat left on
- 1 Bunch of fresh rosemary
- 1 TBSP chopped roasted garlic
- 2 Tsp smoked salt
- 1 Medium diced fennel bulb
- 1 Medium diced onion
- 1 TBSP olive oil
Directions:
At least 1 1/2hour or up to 24 hours ahead season the the loin by poking a few branches of rosemary into the meat, evenly spacing them. Rosemary can also be tucked into any small pockets found on the loin. Rub down the loin with the garlic and salt. Place prepared loin in Ziploc bag and refrigerate until 30 minutes prior to cooking.
Remove the Spit from the rotisserie and turn on the grill. Let it preheat to medium with the lid closed.
Slide one of the prongs onto the spit, followed by the loin and thread the loin directly through its center. Secure the first end and then add the second prong and repeat the process. Center the loin on the spit, tighten the prongs and counterweight (if available). Attach the spit to the motor.
Place a drip pan under the roast to catch the drippings. Place fennel, onion and oil in the drip pan. Turn on the motor.
Close the grill cover (unless grill manufacturer instructions state otherwise) and cook for about 1 1/4 hours until the internal temperature of the loin is 150 to 155 degrees Fahrenheit. A meat thermometer should be inserted deep into the meat to accurately determine the internal temperature. The cooking times will vary depending on thickness and density of the meat. The meat is done when the internal temperature is reached and not based only on cooking times. Halfway through cooking time baste the meat with the pan drippings and again 15 minutes later.
When loin is ready, turn off the grill, and remove the spit using heatproof gloves. Slide the loin off the spit and cover the meat loosely for about 10 minutes prior to carving. Carve, Serve, and Enjoy!
