Smokers are great as they combine ease and versatility with affordability. They normally take up less room than most grills. Smokers are cylindrical in shape, with the cooking source at the bottom, a water pan above that, and then two grates above the water pan. Smokers are fueled by either charcoal, electricity or gas and then wood is placed on heating element to create the smoke.

Electrical operated smokers are the most reliable and convenient. Their biggest advantage is their ability to maintain a constant temperature. Gas fueled also are pretty reliable as far as maintaining constant temperature but they are much more expensive.

Charcoal fueled smokers are the least likely to maintain temperatures and fluctuate as the coals die down. You can alleviate some of these issue by only lighting a few charcoal briquettes at a time but even then it because a nuisance trying to keep the coals all at the same level. One big advantage of using a charcoal smoker is that they can be used anywhere as there is no need for electricity. They also double as a regular charcoal grill. Many people like charcoal smokers as they appear to be more authentic as a smoker but in actuality charcoal contributes nothing to the flavor of the food and charcoal is more expensive than other types of fuel.

Most smokers come with a temperature gauge, which can be grossly inaccurate. The best way to see how your grill temperature is to have a cooking thermometer laying next to the grilling food and only checking it when you test or turn the food. Every time you open the smoker you are letting heat escape and thus increasing the time it takes to cook the food.

It is recommended that you only place water in the water pan. Do not add beer, wine or any flavorings or spices. Placing other ingredients in the pan changes the cooking times, and it is very difficult to adjust the flavoring to the right level. It is much better to add the spices directly to the food and to place only water in the pan for the most accurate flavor and cooking time.
