Steak Marinade
Grilled steak in an all time favorite meal any season of the year. Marinades add flavor and can also tenderize the meat. Marinades used for tenderizing should contain some acidic quality such as lemon juice, vinegar or wine to help break down the fibers in the meat. Some cuts of meat should be marinated overnight but most only need to be marinated a few hours at room temperature. Normally steaks can be marinated 1-3 hours to give the marinade time to gently seep deep into the meat yet not too long as to give the meat a mushy texture and flavor. It is best to use glass or enamel containers for marinating as marinades react with aluminum and other metals which will give your meat a metallic taste. While marinated foods make sure the food is tightly covered to prevent odors seeping into surrounding foods.
The following are 4 good marinades to use with your favorite steak. Each has its own blend of ingredients that add that special touch to your dinner.
Tarragon Marinade
Ingredients:
1 large onion, peeled and sliced into 1/4 slices
1 Cup cooking oil
1/4 Cup tarragon vinegar
1/2 Cup burgundy or other favorite red wine
1/4 Cup lemon juice
1/4 Tsp dry mustard
1 Tsp salt
3 cloves garlic, minced
1 whole bay leaf
6 peppercorns
Separate onion slices into rings and place in glass bowl or jar which has a lid. . Add remaining ingredients, cover and shake vigorously. Chill until ready for use. Shake again and cover steaks and marinate one to 3 hours. Onions may be grilled separately in foil as and added accompaniment.
Worcestershire-Tabasco Marinade
Ingredients:
2 Tbsp Worcestershire Sauce
Dash of Tabasco sauce
1/2 Cup Cooking oil
1/4 Cup lemon juice
1 Tbsp paprika
2 Tbsp vinegar
2 Tsp salt
2 Tsp sugar
2 cloves garlic, minced
Place all ingredients in glass jar or bowl and cover tightly. Shake and mix well. Store in refrigerator until ready for use. Shake again and pour over steak. Marinate 1 -3 hours.
Rum Marinade
Ingredients:
1/2 Cup rum
1/4 Cup soy sauce
1/4 Cup pineapple juice
2 Tbsp. lemon juice
1 Tsp dry mustard
1 Tbsp. molasses
2 Tsp ginger
1 clove garlic, crushed
1/2 Tsp pepper
Place all ingredients in glass jar or bowl with lid. Shake and mix well. Store in refrigerator until ready to use. Shake again, pour over steak and marinate 1-3 hours.
Teriyaki Marinade
Ingredients:
3/4 Cup pineapple juice
2 Tbsp, soy sauce
2 Tbsp. lemon juice
2 cloves garlic, finely chopped
1 Small bay leaf
1/8 Tsp. ground cloves
Place all ingredients in glass jar or bowl with tight fitting lid. Shake and mix well. Store in refrigerator until ready to use. Mix well again and pour over steak. Marinate 1-3 hours.
